Description
This is where the gift of Mesoamerica originates from: with more than 4000 years of history, this cocoa has its roots in the mother culture of the indigenous people, from the Olmechi to the Maya. The genetic potential of the cocoa from Sierra de Tabasco and Chiapas are now enhanced through careful management of the harvest and fermentation process, thus obtaining Mexico’s best fine cocoa, traceable and sustainable.
This provides a pleasant and well-balanced chocolaty profile, with a nice equilibrium between bitterness and minimal astringency. The presence of a delicate acidity underlines the taste of fresh fruits, balanced with smokey hints of tobacco.
The aroma of spices come out towards the end. Consistent yet unobtrusive persistence.
